Her lack of emotional understanding also means that she doesn't truly know how to help others, but her extreme actions in attempting to do this have big consequences. She thought she was acting according to her compass, but she was actually getting increasingly erratic and paranoid, to the point her own candy people were getting scared of her. So because she doesn't take a step back and question how bottling her own feelings is impacting her decisions, she doesn't realise when she's doing something irrationally, like crashing Tree Trunks' wedding, or getting super mad at LSP, or spying on everybody out of a baseless fear they'll turn on her. But she doesn't look out for her own feelings at all. She wants to remove any amount of suffering for the candy people, and for her friends. What makes Princess Bubblegum really interesting is that she has a strong moral compass, but it's not the same as Finn and Jake's, and she also doesn't factor herself into account. She also demonstrates at key points that she wants to be good, and makes an honest effort to do better. She did all the things you describe, but she did them for a variety of reasons.
